Pumpkin Spice Muffins



I don't really like to do much in the kitchen but when there is a recipe as easy as this one I can't help but try it! Stacy told me about this recipe last year so I tried it. They were a huge hit with us!


All you need is a box of spice cake mix & 15 oz. can of pumpkin. Mix well together and spoon into a lined cupcake pan. Bake in a 350 degree oven for 22-24 minutes & let cool. Couldn't be easier, right!?

mmmm i love you fall

Today it's all rainy and I feel pretty lazy and sleepy but I wanted to show you a few things I am working on. My friend Stacy showed me a recipe from the Our Best Bites website. It was their Easy Pumpkin Chocolate Chip Muffins recipe. It really is easy and very yummy!

I have also been working on a pair of D.I.Y. saddle shoes. I have had these shoes sitting around for 2 years. I bought them for the CCCB Agape Banquet. It was my first semester and I had no idea about the banquet. Apparently you wear formal dresses... which I didn't bring with me to college and I wasn't about to go buy a nice dress for this and neither were my friends so we decided to get costumes at some costume shop in Columbia. We went as the Pink Ladies & Thunderbirds. So I had to buy this pair of shoes for that and have been sitting in my closet since then.

I came across this tutorial on the Bleubird Vintage blog. I thought this would be perfect for my pair of shoes! I'm almost done with the second shoe... I'm taking a break :)

Delicious!

Since we moved into our new apartment I haven't had the motivation to cook much but last night I walked past another apartment and could smell something wonderful cooking inside. It inspired me to cook up something. So I picked out one of my favorite meals that I randomly came across on the internet and tried. It is so delicious that I wanted to share it with you all. I found it on Cooks.com.

Chicken Cacciatore
1/2 cup olive oil
1 medium onion
1 medium clove minced garlic

1/2 cup of a 6 oz. can of tomato paste
1/4 cup port wine
1 teaspoon kosher salt
3 large fresh basil leaves (optional)
8 chicken tenders
pasta (any kind)

Finely chop the onion and saute in oil for 15 minutes over low heat. Add garlic, tomato paste, salt, wine, and basil.
Bring sauce slowly to a boil while stirring then reduce heat to a simmer (low heat).

Bake chicken in oven on 350 degrees for 20 minutes. Shred chicken into bite sized pieces and stir into sauce. Cook pasta according to package directions.
